What is your favourite cocktail?
« Without hesitation the Caipirinha for its taste but it is also a cocktail very pleasant to watch. You must prepare it directly in the glass, wash the lime and cut both ends. Then cut the lemon into 8 or 9 pieces and remove the white portion in the middle which is very bitter.
Secondly, combine the lemon and a tablespoon of sugar directly into the glass. At this point you must crush all the elements firmly in the glass and drown the whole with crushed ice cubes (to the brim) and cachaça (up to a finger of the edge).
Finally, you just need to mix and serve with two short straws. The trick is not to add sugar after putting ice because the new sugar won’t dissolves. Enjoy!»

Your favourite bar and restaurant in Paris ?
« The hotel bar Bellechasse of course but also the bar Auto Passions (est-ce qu’ils ont un site?) because I am a fan of mechanic. About restaurants « Le Pied de Cochon » in Châtelet because it’s open 24/24 »
Any projects that you would like to set up at the bar ?
« I just added new cocktails without alcohol which are absolutely delicious »
